5 Ingredient Banana Nut Butter Cottage Cheese Cream

I don’t what took me so long to try cottage cheese ice cream … it is DELIGHTFUL and so easy to make. Plus, it’s a great way to help you hit your protein goals!
Cottage cheese is truly one of the most versatile ingredients you can use when you cook because there are so many recipes you can create with it and it always helps you achieve the best texture.
In this recipe, I decided to use it to make homemade ice cream (a trend I had seen circulate on social media a while ago but never got around to trying). The cottage cheese helps it become super creamy AND high protein, which I love!
You can also make many different flavors of this ice cream but for this recipe, I decided to make it a crunchy banana nut butter flavor and it really reminded me of the famous Magnolia Bakery banana pudding. Let’s get into it, shall we?
The ingredient list & recipe is below!
5 Ingredient Banana Nut Butter Cottage Cheese Cream
Ingredients:
2 bananas
16oz low fat cottage cheese (I use the brand Good Culture)
maple syrup
vanilla extract
nut butter cookies (I used the ones from Simple Mills)
Instructions:
Into a blender, add:
1 16oz container of low fat cottage cheese
1 banana
1/4 cup maple syrup (also option to do 1/8 cup if you prefer less sweet)
2 tsp vanilla extract
Blend it thoroughly and pour into a tray. I used the tray I typically use to make banana bread.
Top with 1 banana (cut into chunky coins) and 3 crumbled nut butter cookies. Use a spoon to mix in.
Freeze for ~4 hours.
Wait for it to melt a little, or microwave in 30 second increments for a faster option.
Total protein in the recipe: 56g protein
Makes 4 servings, so each serving has 14g protein!
