PB Chocolate Energy Balls
(full recipe and grocery list below)
Ingredients
chocolate protein powder (I use BeWell by Kelly)
creamy peanut butter (make sure the ingredients only say ‘salted organic peanuts’)
quick cooking gluten free oats (this is the one I like)
shredded coconut
honey
Instructions:
Add 1/2 cup of gluten free oats to the food processor to create an oat flour.
Add the following ingredients to a bowl (also option to add to the food processor):
1/2 cup creamy peanut butter (32g protein)
1/2 cup of gluten free oats (5g protein)
2 scoops of chocolate protein (48g protein)
a little over 1/8 cup of honey
Mix together and add a little over 1/8 cup of oat milk to help the mixture have the right consistency. Trust the process with mixing and slightly flatten down as you mix.
Add a little more honey or peanut butter as needed to arrive at a consistency that sticks together.
Add parchment paper to a plate.
Roll the mix into balls (makes 7 balls). Also option to grease your hands with coconut oil to make it easier to roll the balls.
Place on the plate, dip in shredded coconut, carefully flipping over and adding more.
Refrigerate for at least 10 minutes and enjoy!!
Total protein: 85g protein
Each ball: 12g protein each ball
Keep the energy balls stored in refrigerator! I hope that you make this and enjoy this protein-packed snack :)
With love,
