6-Ingredient Raspberry Caramel Bites

I don’t know about you guys but I LOVEEEEE having a little sweet treat after a meal, and this is one of my favorite healthy desserts to make because it only requires 6 ingredients, comes together super quick and is also fiber packed because it includes dates!
Here’s my recipe for this delightful dessert with layers of dark chocolate, caramel and raspberries… it’s also perfect to make for yourself as a little sweet treat, to make for a special someone in your life or to share with a friend!
6-Ingredient Raspberry Caramel Bites

Ingredients
a large pack of pitted dates
creamy peanut butter (make sure the ingredients only say ‘salted organic peanuts’)
2 large bars of dark chocolate (I used Hu salty dark chocolate)
1 pack of fresh raspberries
oat milk (or other nut milk)
coconut oil
Instructions:
Add 1 cup of pitted dates to a bowl and cover with very hot water (almost boiling water) all the way until all dates are covered.
Add 100g dark chocolate + 1 tbsp coconut oil to a bowl. Microwave in 30 second increments until fully melted. Use a spoon to mix together.
Use half the melted chocolate and use a spoon to add it to the base of a mini muffin silicone tray (the one I use). Use spoon to bring the chocolate up to the sides of the tray.
Add tray to freezer for 10 min.
Strain dates and add to a food processor or high speed blender with:
3 tbsp creamy peanut butter
1 tbsp coconut oil
1/4 cup oat milk (option to add more if needed)
Once well combined, add on top of the frozen chocolate layer in the silicone tray.
Wash raspberries.
Add 1 cup of raspberries to a bowl, mash with a fork, then add on top of date caramel.
Top with remaining dark chocolate (option to melt more squares with coconut oil in the microwave if needed.
Add to freezer for at least 10-15 minutes.
Keep in the tray or remove from tray and store in a glass tupperware in the freezer, and enjoy!!
