If you want to change up your usual recipe for baby potatoes AND you enjoy crispy things… you need to try this easy smashed potatoes! They are SO delish and can honestly be enjoyed on their own with a dip (like hummus), or added to a nourish bowl with a protein and veggie.

Crispy Smashed Potatoes

Ingredients
1 pack of baby potatoes
Seasonings
extra virgin olive oil
garlic powder
paprika
ground black pepper
salt
Instructions:
Add 15-20 baby potatoes to a pot with hot water and bring to a boil on the stovetop under high heat. Boil until potatoes are soft when poked with a fork.
Strain and rinse with cold water and pat dry with a paper towel.
Add to a baking tray with parchment paper and smash them down with a large fork.
Season with 2 tbsp melted butter, 1-2 tbsp olive oil, garlic powder, black pepper, paprika and salt,
Mix the seasonings in with your hands.
Option to air fry for 15 minutes at 400F or to bake at 420F for ~20-35 min (until crispy).
Enjoy with a dip, or add it to a nourish bowl (ex. with turkey meatballs, oven roasted broccoli and hummus)
