High Protein Egg Bites
A great meal-preppable breakfast idea to save you time in the morning and help you hit your protein goals :)

If you’re someone who’s busy and usually don’t eat breakfast at home because you don’t want to go through the hassle of making it in the morning, this recipe will help you out so much!
They are quite quick to make – the prep only takes ~5 minutes and then all you have to do is pop it in the oven for 30 minutes, and they’re ready to go. Each egg bite is packed with 4 different sources of protein and they turn out super yummy.

High Protein Egg Bites

Ingredients:
pasture raised eggs
low fat cottage cheese (I use the brand Good Culture)
crumbled feta
red onion
organic spinach
1 pack of chicken sausage (I used the caprese one from Bilinski’s)
salt
black pepper
oregano
Instructions:
Preheat oven to 325F.
If you have a feta block, chop up/crumble a sliver of the feta, enough for 1/2 cup measured out.
Chop red onion, spinach and at the end, 1 chicken sausage.
Into a bowl, add 7 pasture raised eggs (42g protein) and mix with a fork, then add:
1 cup of cottage cheese (28g protein)
1/2 cup crumbled feta (10g protein)
1/3 cup chopped red onion
1/4 cup chopped spinach
1 chicken sausage, thinly chopped (12g protein)
salt
black pepper
oregano
Combine it all together with fork.
Add olive oil or olive oil spray to a muffin tray and use a piece of paper towel or napkin to spread it. Add mixture (should make 10).
Add to oven for 30-35 minutes.
Total protein = 92g

This is a great meal prep breakfast to have ready to go for yourself or your family, especially if you tend to have busy mornings! Here are a few tips to keep them fresh:
Let them cool completely before freezing.
Store them in an airtight container or a freezer-safe zip-top bag.
Optional: Wrap each one individually in plastic wrap or foil to prevent freezer burn.
Label with the date so you can keep track.
When you're ready to eat them, you can reheat straight from frozen in the microwave (about 1–2 minutes), or thaw in the fridge overnight for a softer texture before reheating.
