Whenever I go to Sweetgreen, I always gravitate towards the harvest bowl… there’s just something about the combination of sweet potato, quinoa and chicken. I decided to switch the usual harvest bowl recipe a little bit, adding tomatoes, avocado and swapping chicken for chicken sausage. I also made a super yummy, high protein creamy dressing to top it all off. It came together very quick – and if you meal prep your quinoa and/or sweet potatoes in advance, it comes together even quicker. It’s packed with 44g protein and is TASTYYYYY baby!

High Protein Harvest Bowl

Ingredients:
1 sweet potato
quinoa
1 pack of chicken sausage
mixed greens
cherry tomatoes
crumbled feta
avocado
greek yogurt
1 lemon
Seasonings:
extra virgin olive oil
salt
pepper
garlic powder
cinnamon
honey
everything bagel seasoning
Instructions:
Preheat oven or airfryer to 400F.
Rinse 1 cup quinoa. Add to a pot with 1.5-2 cups of water (check package instructions) and salt. Bring to a boil. When boiling, lower heat to simmer and cook for 15-20 min.
Chop 1 sweet potato into tiny cubes. Add to baking tray with parchment paper. Drizzle olive oil (~1 tbsp), salt, garlic powder and cinnamon and massage it all in to make sure everything is evenly coated.
Add to oven for 25 min, or air fryer for 12-15 min.
Chop 2 chicken sausage links into small pieces. Heat up olive oil on a skillet, add sausage and cook each side 1-2x until golden brown.
Make salad dressing by mixing:
1/4 cup greek yogurt (6g protein)
juice of 1 lemon
1/2 tbsp olive oil
garlic powder
salt
pepper
1/2 tsp honey
Once ready, build your bowl with:
a base of mixed greens or spinach mix
1/2 cup quinoa (4g protein)
2 chicken sausages (24g protein)
3/4 cup sweet potato (2g protein)
1/2 avocado (2g protein)
1 serving feta (6g protein)
Chopped cherry tomatoes
Dressing (6g protein)
Everything bagel seasoning
