High Protein Strawberry PB Pancakes
A yummy protein-packed breakfast idea that is perfect for a cozy brunch at home!

There’s nothing like a cozy morning at home – even better if it includes a nice stack of strawberry peanut butter pancakes. This recipe is very protein packed and easy to make, and it was husband-approved here at home.
I love sneaking cottage cheese into recipes because I find the flavor to be pretty mild, it helps add a fluffy texture and boosts the protein content a ton. Let’s dive in…
High Protein Strawberry PB Pancakes

Ingredients:
pasture raised eggs
16oz. tub of low fat cottage cheese
quick cooking gluten free oats
vanilla extract
maple syrup
baking powder
1 pack of organic strawberries
Protein Count:
Total protein count in the recipe: 97G protein.
Makes for about ~10 pancakes.
9.7G protein per pancake.
Instructions:
Add the following ingredients into a blender:
- 2 cups cottage cheese (I use @goodculture) - 56G protein
- 4 pasture raised eggs (I use @vitalfarms) - 24G protein
- 1.25 cups oats (I use quick cooking) - 17G protein
- 1 tsp vanilla extract
- 3 tbsp maple syrup
- 1 tbsp baking powderChop a large handful of organic strawberries into small pieces and add to the batter.
Grease a skillet with olive oil spray and add batter (about 1/4 cup per serving).
Cook each side on medium-low heat until golden-brown.
Prep homemade strawberry “jam”: Add the remaining organic strawberries to the food processor with 1/8 cup maple syrup.
Stack 4 pancakes (~39G protein) with strawberry jam in between. Top with sliced strawberries and a drizzle of creamy peanut butter.
