Lemon Blueberry Crunch Yogurt Bowl
A breakfast with 22g protein, inspired by a lemon blueberry pie!

One of my faaaaaavorite flavor combo is lemon and blueberry and you guys know how obsessed I am with yogurt bowls so I decided to combine them both!
Inspired by a lemon blueberry pie, this recipe has 22g protein and is tangy, crunchy and soooo delish. Such a great way to switch up your usual yogurt bowls!
Lemon Blueberry Crunch Yogurt Bowl
Ingredients
High protein plain skyr or greek yogurt
1 lemon
Gluten free granola (I use Purely Elizabeth)
Frozen blueberries
Maple syrup
Instructions:
Add 1/4 cup blueberries to a small bowl and microwave for 1-2 min, until warmed and there is a bit of a blueberry “sauce”
Combine 3/4 cup skyr (19g protein) with juice of a little less than a lemon half. If you need more sweetness, you can mis in 1/2 tbsp monk fruit sweetener, 1 tbsp maple syrup, or add 1 scoop of vanilla protein powder for a creamier texture and also a boost of protein!
Stir well together and add defrosted blueberries; mix together.
Add 1/3 cup granola (3g protein) and some more frozen blueberries
Top with 1/2 tbsp maple syrup (option to add more if you prefer a bit sweeter) and some lemon zest.
& there you have it… time to enjoy!
