One Sheet Bake with Tzatziki
Another easy cleanup meal idea – makes for 3 servings so it can also be a great meal prep!
Whenever I am craving a cozy warming meal that’s pretty low effort, I go back to my easy cleanup hack – grab a cutting board and baking tray, add my ingredients and seasonings and pop in the oven.
Once the food is ready, all you have to do is throw out the parchment paper and wash your cutting board!
This combination turned out very delicious and was super quick to put together, while also being balanced with protein, fiber and healthy fats.

One Sheet Bake with Tzatziki
Ingredients:
2 medium-large yellow potatoes
1 pack of chicken sausage (the one I use)
1 can of chickpeas
1 pack of shredded brussel sprout
1 seedless cucumber
0-2% greek yogurt
a bunch of fresh dill
1 lemon
Seasonings:
olive oil
sea salt
black pepper
paprika
garlic powder
minced garlic
coconut aminos
tahini
Instructions:
Preheat oven to 400F.
Chop 2 potatoes into round pieces and then in half. Add to a baking tray with parchment paper and add 1 pack of shredded brussel sprouts.
Strain and rinse 1 can of chickpeas. Pat dry with a paper towel. Add to the baking tray with potatoes and brussel sprouts.
Season everything with olive oil, sea salt, black pepper, garlic powder and paprika. To the brussel sprouts, also add coconut aminos and 1 tbsp tahini.
Mix well, I like to use my hands to make sure everything is evenly coated (and therefore, flavorful!).
Open a pack of chicken sausage, cut it up and add to another tray with parchment paper. Add olive oil spray and mix in.
Add both trays to the oven for 30 min – there’s a high chance that the brussel sprouts will cook before everything else. If that happens, remove the brussels, add to a container and set aside, then add tray back to the oven.
While everything is cooking, you can make some homemade tzatziki (recipe below). You can also use a pre made one like the one from Cedars.
Remove everything from the oven.
Add a base of tzatziki to your plate and add the roasted veggies and sausage.
& voilá! There you go – enjoy!!
