This is honestly one of my FAVORITE healthy meals AND it’s also filled with fiber, cruciferous veggies and plant based protein. Even though I normally eat animal protein and lean on that as a way to hit my protein goals, this is a recipe that can help any of my vegan or vegetarian followers hit theirs in a very fun way too… though this recipe is so delicious I guarantee anyone would like it (even if you’re not plant based!).
