Rainbow Black Rice Bowl

As the weather is getting warmer, I am feeling so called to colorful plates, adding fruits into my bowls, and playing around with fun ingredient combinations. This nourish bowl turned out so delicious! The base ingredient is black rice, which is more protein rich than white or brown rice, with 9g protein per cup – which I recently learned! It also comes together really quick, especially if you already have the chicken and rice prepped in advance!

Rainbow Black Rice Bowl

Ingredients:
black rice
1 head of purple cabbage
thinly sliced grilled chicken breast
mango
frozen edemame
avocado
cilantro
everything bagel seasoning
hot honey
extra virgin olive oil
optional: lime
Seasonings:
salt
pepper
garlic powder
oregano
paprika
worcestershire sauce
Instructions:
If your rice is not already prepped, follow package instructions and use at least 1 cup of dry rice. Takes ~15 min.
If the chicken is not ready, do the following:
Add extra virgin olive oil to a pan at medium-high and wait for it to heat up.
Add thinly sliced chicken breast to a mixing bowl and season with: salt, pepper, paprika, garlic powder and oregano.
Mix the seasonings in with your hands to make sure it all gets coated.
Add chicken to the heated pan, cooking each side 2x until it starts to get golden brown.
Poke holes with a fork, drizzle a little worcestershire sauce, sizzle for 1 min and lower the heat.
Prep the remaining ingredients:
Add 2/3 cup of frozen edemame to a bowl. Microwave for 1.5-2 min until defrosted.
Thinly slice red cabbage and about 1/2 cup of mango.
Wash cilantro and separate a bunch from the stems.
Chop 2 thinly sliced chicken breasts.
Make your bowl:
base of 1 cup black rice (100g) - 9g protein
2/3 cup edemame - 11g protein
4oz chicken (~ 2 thinly sliced chicken breasts) - 27g protein
shredded cabbage
chopped mango
cilantro
1/4 avocado
top with hot honey, everything bagel seasoning and light olive oil drizzle
If you have a lime, adding some lime juice would also be super yummy!
Total protein: 47g protein
Mix it up and enjoy!
This is a great recipe to make on a busy day where you’re trying to get your protein in but don’t want to make a boring bowl. It’s so colorful and yummy, and I loved how it turned out!
