There’s a coffee shop I’m obsessed with here in NYC and they have a great seasonal menu – they recently updated it with a spring grain bowl and after trying it out, I knew I had to recreate it! This recipe is both fresh and filling, it’s flavorful and also very protein-packed.

Spring Nourish Bowl

Ingredients:
1 pack thinly sliced chicken breast
1 zucchini
mixed greens or spinach mix
shaved parm
marinated artichoke
frozen peas
1 lemon
Seasonings:
extra virgin olive oil
salt
pepper
garlic powder
paprika
hot honey
everything bagel seasoning
Instructions:
Chop 1 zucchini into quarters. Heat up olive oil on a skillet, add paprika, salt, pepper and garlic powder and mix with the olive oil, then add zucchini and mix in the seasonings. Cook over medium-high until golden brown.
Add thinly sliced chicken breast to a mixing bowl and season with salt, pepper, paprika, oregano and garlic powder. Mix well with your hands.
Make salad dressing by mixing:
juice of 1 lemon
1/2 tbsp olive oil
garlic powder
salt
pepper
1/2 tsp honey
Add 1/2 cup green peas (4g protein) to a bowl and microwave for 1 minute until defrosted.
Add a base of mixed greens to a bowl with dressing and peas. Mix together/chop it up.
Add:
cooked zucchini
4 marinated artichokes, chopped
5oz chicken (34g protein)
5 tbsp parm (10g protein)
