Strawberry Matcha Chia Pudding
A fun twist on chia pudding that's also protein packed and energizing!!
When I know I’m having a busy week, or know that the next day in my life is going to be hectic, I like meal prepping breakfast to set myself up for success, and chia pudding is one of my favorites because it’s packed with fiber (& a lot of people struggle to get enough!).
I decided to give my typical chia pudding recipe a fun twist and have it be strawberry matcha flavored – and it was not only so easy to make, but also soooo delicious.
The recipe and ingredient list is below!
Strawberry Matcha Chia Pudding (13.5G PROTEIN)
Ingredients
Ceremonial grade matcha
Chia seeds
Greek yogurt
2% milk
Pistachio milk (or other nut milk)
Maple syrup
Frozen strawberries
Fresh organic strawberries
Granola of choice (I use gluten free granola from Purely Elizabeth)
Instructions:
Prep chia pudding before bed by combining the following ingredients in a glass jar or in a cup:
1 tsp matcha
3 tbsp chia seeds
1/3 cup greek yogurt (~9g protein)
1/4 cup fairlife (4.5g protein)
1/4 cup pistachio milk
2 tsp maple syrup
Cover with lid or tin foil and refrigerate overnight.
In the morning, add frozen strawberries to a bowl & microwave for 1 minute to defrost, then add to base of a glass.
Add matcha chia pudding (13.5g protein)
Top with 2 sliced strawberries + granola
