Summer Corn Salad
My recent FAVORITE salad – it's the perfect mix of refreshing and creamy!
Gluten Free and Dairy Free.
Summer is fast approaching and it’s time for refreshing and delicious salads! This summer corn salad is sooo incredibly delicious and the best part is that it comes together in 5 minutes! If you’re going to any dinner parties, potlucks, barbecues, etc this is a great recipe to have in your arsenal and I guarantee it will impress whoever is at the gathering.
It uses 4 base ingredients – corn, cherry tomatoes, avocadoes and parsley. I decided to use frozen sweet corn for ease because it helps make the recipe easier and faster, but you can also make this with fresh corn or corn you make off the grill.
Summer Corn Salad

Ingredients
frozen sweet corn
fresh parsley
3-4 medium avocadoes (ripe)
24oz pack of cherry tomatoes
extra virgin olive oil
1 lemon
salt
Instructions:
Add 2-3 cups of frozen corn to a bowl and microwave for 2-3 minutes until fully defrosted.
Wash 1 pack of cherry tomatoes and pat dry. Chop cherry tomatoes in half.
Wash 1 large handful of parsley, pat dry and chop thinly.
Open 3 ripe avocadoes and cut each half into large chunks.
Build salad:
Chopped cherry tomatoes
Defrosted corn
Chopped parsley
Ripe avocadoes
Juice of 1 lemon
4 tablespoons of extra virgin olive oil
1-2 teaspoons of salt
Mix it up well and enjoy!
