For quite a while, I’ve been hearing about this viral combo and not gonna lie, I kind of thought it was weird. I though the pairing of the ingredients seemed so odd, but I decided to finally give it a try and OMG was I wrong! Everything paired SO well together, and this bowl was packed with fiber, healthy fats, complex carbs, and 44g protein – aka so balanced – which I loved.
Everything came together so fast, in less than 30 minutes, which is a plus for any busy people trying to hit their protein goals!
The recipe outline and ingredient list is below.
Sweet Potato, Ground Beef & Cottage Cheese Bowl
(full recipe and grocery list below)
Ingredients:
1 sweet potato
1 pack of 85% lean grass fed ground beef
1 avocado
1 tub of low fat cottage cheese (I use good culture)
1 red onion
Seasonings:
salt
pepper
olive oil
garlic powder
paprika
cinnamon
red pepper flakes
everything bagel seasoning
hot honey
Instructions:
Preheat oven or airfryer to 400F.
Chop 1 sweet potato into tiny cubes. Add to baking tray with parchment paper. Drizzle olive oil (~1 tbsp), salt, garlic powder and cinnamon and massage it all in to make sure everything is evenly coated.
Add to oven for 25 min, or air fryer for 12-15 min.
Chop 1/2 red onion into small pieces. Heat up 1 tbsp olive oil on a pan and once hot, add onions and cook until softened and fragrant. Add ground beef and break it up. Add salt, pepper, garlic powder and paprika and mix in, cooking over medium-high heat until there are no pink parts.
Once those two things are ready, build your bowl with:
1 cup sweet potatoes or around 1/2 of the prepped potatoes (2g protein)
5oz ground beef (27g protein)
1/2 cup cottage cheese (14g protein)
1/2 avocado, in cubes (1g protein)
drizzle of hot honey
everything bagel seasoning
red pepper flakes
There you go – a bowl with 44g protein that is also DELISH and will definitely become a staple for me on busy days. This turned out SO good and is definitely worth the hype, in my opinion! If you recreate it, please share your creations in our groupchat :)
With love,
Ooooh I am 100% going to sub lentils for the ground beef bc i don’t eat meat but this sounds so good YUM!
