Watermelon is in peak season during the warmer months, specifically from May through September in the U.S. – that’s when it’s the juiciest, sweetest, and most affordable… so let’s put it to good use!
Since it has a high water content, watermelon is super hydrating which is perfect for a refreshing summer salad. This salad is great as a side dish, but also incredible as a healthy snack!
Watermelon Feta & Mint Salad

Ingredients
1 watermelon
1 pack of crumbled feta
fresh mint
1 lime
extra virgin olive oil
1 red onion
Instructions:
Open a large watermelon in half, then cut into quarters. Remove seeds and cut into square chunks.
Separate 2 cups of squared watermelon chunks.
Wash a small handful of fresh mint, pat dry and chop thinly. Separate 1/3 cup of chopped mint.
Separate 1/3 cup of crumbled feta.
Cut a red onion in half, and cut less than a quarter of it into super thin slices.
Build salad:
2 cups of chopped watermelon
1/3 cup of chopped mint
A little bit of thinly sliced red onion
Zest a lime over it
Juice of 1/2 lime
Mix it up well
Top with 1/3 cup crumbled feta (and a little extra mint leaves if you want)
