Once you make this banana bread, you’re not going to need any other. It’s perfectly gooey and simply delicious! It’s a perfect snack or breakfast and so yummy paired with some tea or coffee.
PS: this recipe is also gluten free because we use blended oats instead of all purpose flour :)
Gooey Chocolate Chip Banana Bread
(full recipe and grocery list below)
Ingredients
3 ripe bananas
2 pasture raised eggs
quick cooking gluten free oats (this is the one I like)
dark chocolate chips
maple syrup
extra virgin olive oil
baking powder
ceylon cinnamon
salt
Instructions:
Preheat oven to 350F.
Add 2 cups of gluten free quick cooking oats to the blender or food processor to make it into a flour.
MIX WET INGREDIENTS:
- 3 mashed bananas
- 1/3 cup maple syrup
- 1/3 cup olive oil
- 2 eggs
ADD IN DRY INGREDIENTS:
- 2 cups blended GF oats
- ceylon cinnamon
- 1 tsp baking powder
- sea salt
Add in 1/2 cup of dark chocolate chips (measure with the heart)
Pour over a baking tray (greased with olive oil, olive oil spray, or butter) or with parchment paper.
Top with more dark chocolate chips.
Bake at 350F for 35-45 minutes. For a gooey-er consistency, bake for 35-40 min; for more firm consistency bake for 45-50 min.
Every time I make this banana bread it’s a huge success with everyone who tries it, so I hope it becomes a favorite amongst your family and friends too!
With love,
